The activity target keeps changing the setting:

vbActivity > settings > activity stat settings > Activity Target: Minimum Points

Every day I have to reset it, what the hell??
 
The Minimum Points setting doesn't reset, but the Activity Target setting does. It will reset itself daily.

This is intended behaviour, it's done in order to ensure that the activity target is correct based on your forum's activity without you needing to interact with it.
The Minimum Points setting is used to ensure that you can exclude the most inactive users and thus setting a more realistic target for your more active users.
 
Oh, I see... so how are the Activity Target Winners calculated? Just it just calculate who earned the most points per day?
 
Per Day / Week / Month depending on what checkboxes you have checked, indeed :)

Um.. so where do I go to check those particular boxes for Achievements? It says, "There are no Achievement Targets to display at this time. " When I go to :

admincp>settings>DragonByte Tech: vBActivity - Achievements Settings > there isn't any box to check
 
You asked about Activity Targets, not Achievement Targets :)

To setup Achievement Targets, you need to use the "Parent" feature of the Achievements system.
To do this, let's assume you have 2 Achievements: Posts >= 5, Posts >= 10. You should edit the Posts >= 10 Achievement and set its Parent to the Posts >= 5 one.

This tells vBActivity that after achieving Posts >= 5, the next Achievement the user should aim for is Posts >= 10 :)

It will still display that message if there's no Achievements left in the "chain" to achieve for your specified category.
